Penne Vodka

Penne Vodka with chicken and garlic bread

Ingredients for Penne Vodka

  • 1 pound of Pasta (Your choice)
  • 2 ½ tbsp of Onion (Diced)
  • 2 cloves of garlic 
  • 7 ounces of tomato paste
  • ½ cup heavy cream
  • ½ cup vodka
  • Pecorino Romano (To taste)
  • Salt and Pepper (To taste)

Ingredients for Chicken

Marinade

  • 2 eggs
  • 1 tsp smoked paprika 
  • 1 tsp cayenne pepper
  • ½ tsp salt and pepper
  • ½ tsp garlic or garlic powder
  • 1 tbsp lemon juice

Bread crumb coating

(For approximately 4 chicken breasts)

  • 1 cup panko bread crumbs
  • ⅓ cup seasoned Italian bread crumbs
  • ½ tbsp fresh parsley (Chopped)
  • 1 tsp smoked paprika 

Ingredients for Garlic Bread

  • 4 tbsp room temperature butter (doesn’t matter if salted)
  • ½ tsp garlic powder
  • ½ tsp fresh parsley (Chopped)

Pasta and Vodka Sauce

  1. Add diced onion and garlic to a pan with a little bit of oil. Fry the onion and garlic until a light golden brown.
  2. Add salt, pepper, and tomato paste to the pan. Let it simmer for 2 minutes while stirring.
  3. Add the vodka and heaving whipping cream, cook for 5 minutes, stirring occasionally
  4. Add some pepper for taste
  5. Plate and top with cheese (Optional)

Chicken 

  1. Add and whisk together the eggs in a medium sized bowl
  2. Add in the smoked paprika, cayenne pepper, salt, pepper, garlic and mix together
  3. Add in the chicken
  4. Finally, add the lemon juice
  5. Stir together the seasoning and chicken until the chicken is completely coated in it
  6. Let the chicken sit in marinade for approximately 15 to 20 minutes in the refrigerator
  7. In a small bowl or plate, mix together the panko and italian bread crumbs
  8. Add in the fresh parsley and smoked paprika
  9. Mix together
  10. One piece at a time, add your chicken to the bread crumbs and coat both sides of the chicken entirely

Cook in Air Fryer

  1. Place your chicken in the air fryer
  2. Cook the chicken for about 10 minutes at 400 degrees fahrenheit 
  3. Flip the chicken and cook for another 10 minutes 

Fry in pan

  1. Add oil to a medium pan with the strove set around 350 degrees fahrenheit

(you can add a little bit of flour to see if the oil is ready, if the flour sizzles, the oil is ready)

  1. When the oil is hot, add in your chicken
  2. Cook to chicken for approximately 10 minutes or until a golden brown color
  3. Flip the chicken and cook for another 10 minutes

Garlic Bread

  1. Mix together the butter and garlic in a small bowl until completely combined
  2. Add in the fresh parsley and mix again until combined
  3. Cut the bread how you want and spread the butter mixture evenly onto the bread
  4. Place bread in oven at 450 degrees fahrenheit for about 10-15 minutes or until your liking
